If you're anything like me, you probably field this question at least once per day, "what are we going to have for dinner tonight"? The dreaded question, right?? Anyway, I am going out to dinner with a girlfriend tonight, so the hubs/kids are getting chicken tortilla soup from the crockpot. I never had such affection for my crockpot until I had kids, and I certainly do not use it enough! In the time that my kids just finished their lunch, dinner is prepped! I cook a lot, so I always love quick and easy recipes...this is one of them! Thanks to Kathy for giving me this recipe several year ago...
Chicken Tortilla Soup
4 cups chicken broth (2 cans)
1 bag frozen corn
shredded chicken (rotisserie works great or boil and shred)
8 oz. cream cheese
1 jar picante sauce
1 can diced tomoatoes
1 bag success rice (cook before putting in crockpot)
Put all ingredients into a crockpot and let it heat through for a few hours. If it starts to boil, turn to low or warm. Top with your favorite goodies!
Garnish I like to use:
sour cream
shredded cheese
tortilla chips or strips
green onion
While I am at it, tomorrow night I am going to try a new recipe: Thai Chicken Pizzas
Thai Chicken Pizzas (Betty Crocker)
6 flour tortillas (8 to 10 inches)
1/2 cup peanut butter
1/4 cup soy sauce
2 Tablespoons seasoned rice vinegar
2 teaspoons sugar
2 cups shredded mozzarella
2 cups chopped cooked chicken
1 bag (16 oz) frozen stir fry veggies, thawed and drained
Heat oven to 400. Place tortillas on ungreased cookie sheet and bake for about 5 minutes, or until crisp. Mix peanute butter, soy sauce, vinegar, and sugar and spread over tortillas. Top each with 1/4 cup of cheese. Spread chicken and veggies evenly over tortillas. Sprinkle with remaining 1/2 cup cheese. Bake 10-15 minutes or until pizzas are heated through and the cheese is melted.
